Goan cooking is built on two or three ground masalas, and once you can make those the rest follows. The class starts with the stone and the roasting, which is the part that no recipe conveys.
You cook a fish curry rice, a chicken or vegetable xacuti and a sweet, then sit down and eat it. Recipes go home with you in a form that works with the ingredients you can actually buy.
